Lentil and Bacon Soup

Here is a simple tasty lentil soup (for those who don’t like curry) made entirely from dry ingredients. I made some up for my lunch today and found it pleasant but perhaps a bit strong tasting. Next time i will go easier on some of the stronger ingredients such as the onion and garlic powder and the tomato puree. Still, it makes a meals big enough for two for just a few cents and is very light to carry.

To 3 1/2 cups of water, add:

1 cup red lentils

40 grams Hormel bacon pieces

2 teaspoons onion powder

1 teaspoon garlic powder

1/2 teaspoon ground white pepper

1 sachet Continental garden vegie cupasoup (or similar)

1 50 gram sachet of tomato puree (or 1/2 sachet of tomato cupasoup)

4 teaspoons milk powder

 

Bring to the boil then simmer for 10 minutes stirring occasionally

Version Two

As I said the above was a little strong, so I have altered it as follows:

To 3 1/2 cups of water, add:

7/8 cup of McKenzies Superblend Fibre Freekah, Lentils & Beans 200 grams 680 calories

1 sachet Continental Spring Onion Cupasoup 23 grams 56 calories

1/2 Sachet Continental Hearty Tomato Cupasoup 24 grams 78 calories

1/2 teaspoon ground white pepper 1 gram? Negigible

4 teaspoons of full cream milk powder 20 grams 100 calories

6 teaspoons of Continental Deb mashed potato 24 grams 90 calories

Add bacon to taste eg 40 grams 150 calories

 

Total weight 332 grams. Total calories 1154

 

Bring to the boil then simmer for 10 minutes stirring occasionally

You will find this much milder – quite a different taste actually

This quantity is enough for a meal both of us in my experience. We usually have a few nuts and dried fruit, perhaps a piece (or a hot cup) of chocolate as well.
